I caught this nice 3.4 lb�er out of the canal at Lock 7 off Canal Rd. I was dragging a top water frog (the kind with the kicking legs) across a layer of vegetation that was floating on the surface. A smaller one was also caught, but released. This guy was dinner �which everyone loved, so here�s the recipe if you�d like to give it try.
Crispy Bass Nuggets:
Filet bass into nugget size pieces (about the size of � your thumb).
Batter:
1 egg
Juice � lemon
Juice � lime
1 tsp diced garlic
Salt and pepper, paprika, Italian herb seasoning blend, crushed cayenne (if you like it hot)
Splash or two of hot sauce
4 � 5 heaping tbl spoons flour
1/3 cup of beer
Mix that up until you get the consistency of pancake batter (you can play with the beer and flour content if it doesn�t work out right the 1st time).
Dunk you nuggets in this and get them covered all over.
Pick up each piece individually and roll in panko bread crumbs, pushing down to get the breading to stick well. Transfer to plate lined with paper towels.
Fry them up (I like canola oil) until golden brown.
Squeeze some more lemon on top when done, and sprinkle with a little salt and enjoy!
