I stopped by the Snakehead Derby last Saturday and was given a nice snakehead fillet. Here's how I prepared it:
1. Sprinkle both sides liberally with salt, pepper, and garlic powder.
2. Saut� in olive oil on medium heat for 3-4 minutes per side, till fish is no longer translucent.
3. Serve with a simple garden salad.
